FOD-Angel Hair with Veggies
If you follow me on Twitter, you'll notice I'm always posting photos of what I'm cooking/eating. So I thought it would be great to add a "series" called FOD (Food of the Day) just like my LOD's (Look of the Day) of what I'm cooking and how I make it.
What you'll need:
1 box of angel hair pasta
handful of spinach
3 cloves of garlic, chopped
2 fresh basil leaves
1 medium tomato
6 or 7 artichoke hearts ( I use frozen because it's easiest)
handful of cilantro
3 stalks of asparagus
1 can of black olives
1/2 a lemon, juiced
handful of parm cheese, grated and sliced
salt & pepper to taste
chop all your veggies & garlic to prepare for sauteing. It's best to chop all the veggies the same size so everything is proportionate.
Boil a pot of water; add salt. Once boiled, add the angel hair pasta and cook until al dente.
Place olive oil, garlic & spinach in the pan to flavor and wilt the spinach.
Add artichokes once the spinach is wilted along with tomatoes, asparagus, basil & cilantro. I added more salt and pepper since artichokes are normally fairly bland. You want to add these veggies last so they keep their color and bite.
Add lemon to intensify the colors and add a tang to the dish. It won't be an overpowering taste so don't worry. Meld veggies with pasta, add black olives & grated parm cheese. Add a few turns around the pot of olive oil to coat the pasta and create your "sauce".
Grab a bowl, plate it up, and add sliced parm cheese on top. :)
When I cook, I normally don't use a recipe. I stick with things I like to eat and add them in some form of a pot; whether it be to pasta or a pizza or a soup. It makes meals easier for me to cook whether it's for myself or for guests. And yes, this meal was entirely for me but I always make plenty of extras because I will have it for lunch or for friends.
PS. This pasta dish is great cold too.
